Gonna try a new format and see how this works. One main post per day should be more manageable than three. I usually post everything at once anyway. Breakfast was gf toast, eggs, and avocado. With sexy hot chocolate (with maca powder). 😉 And juiced this stuff. Hello, my beautiful juicer. How I’ve missed you. […]
Traveling today, so I’m cutting myself some slack. I did get a pic of breakfast. Scrambled eggs on a corn tortilla with avocado and salsa verde. Strawberries and hot chocolate (almond milk, cocoa powder, agave). Lunch was coconut spread and banana on gf bread and massaged kale salad. And an imuno-build greens drink. Snacked on […]
Not much of a dinner, but it was late, and I really wasn’t hungry. Just needed something to help take my meds. These gf cookies are really good. We tried the peanut butter and ginger snaps. They do have quite a bit of sugar, so definitely not something I even need to be eating right […]
Met an old friend for lunch, and she satisfied my cravings for fresh juices by taking me to one of her favorite spots. The green one is ginger, celery, and cucumber. The orange is carrots, beets, apple, celery, and cucumber, I think. Baby girl and I shared a little tub of blueberry coconut yogurt. And […]
Apples, oranges, and a 3-egg omelet with baby kale and garlic, topped off with avocado. I’m pretty sure these eggs were free range or whatever… they came from a local market and were all different colors with spots on them. My dad picked them up when he was stocking up on kefir for me. That’s […]
Massaged kale salad left over from lunch. I posted this recipe before, but it’s worth posting again. Break kale into bite size pieces, squeeze a bunch of fresh lemon juice over it and sprinkle with sea salt. Massage for several minutes until it starts to wilt down a bit. Add some olive oil and massage […]
My sweet aunt joined us for lunch today. Mom made a delicious, healthy shrimp dish and lentil soup with mustard greens. Dad made a healthy chicken and peppers dish. I made a massaged kale salad and a healthy fudge recipe a friend posted on Facebook. All turned out great. I’ll try to post ingredients/recipes later. […]
Spent the night at my brother’s. Couldn’t resist bacon and grits this morning, but only had a little bit. Also had GF cereal, camomile and lavender tea, and coconut water.
Went to the fair and had trail mix and gf cookies. Ate more gf toast when we got home (with peanut butter) and drank a lot of coconut water. I didn’t love coconut water the first time I had it, but I do now. It feels so hydrating. Sorry no pics.
Still craving greens today. Particularly celery. Soooo missing my juicer. Made a creamy celery soup to satisfy the craving- celery, veggie stock, onions, garlic, rosemary, sea salt, broccoli, and a baking potato. Also had some store bought carrot juice. Yum! I love this stuff!
I was desperately craving greens and really missing my fresh green juices. This salad was slightly painful to eat since my tongue is still healing and I used lemon juice and olive oil as a dressing, but it satisfied my greens craving. And for dessert, a larabar and some blueberries. Later on, my dad made […]
Sautéed green bananas with coconut oil, garlic, red peppers, and green onions. Also had a mug of hot chocolate (coconut milk, cocoa powder, and agave) and an imuno-build greens drink. And 2 gf cookies my mom got at the health food store. They were delicious! I’ll post pics of the brand later. All the ingredients […]
Steel cut oats with fruit and a bit of honey. Not gluten free, but from what I understand, oats themselves don’t have gluten, it’s just a question of cross-contamination during processing. Since I don’t have celiac disease, the risk of small amounts through cross contamination shouldn’t be a big deal. I hope. And leftover gf […]
Buffet style family dinner… And dessert… The Kashi cereal is really delicious and I feel good about the ingredients. The Glutino cereal bar- not so much. And I’m sure that corn starch and canola oil is GMO. I’ll eat the cereal bars while I’m here, but I wouldn’t buy them at home. The Kashi cereal […]
My mom made a delicious homemade chicken salad for me, with roasted chicken, boiled eggs, dill relish, and vegenaise. My mom has worked extremely hard to make sure I could stick to my diet while I’m here. She has shopped and cooked and slaved over complicated recipes with strange ingredients. And made adjustments to her […]
