Sunday’s Lunch

My sweet aunt joined us for lunch today. Mom made a delicious, healthy shrimp dish and lentil soup with mustard greens. Dad made a healthy chicken and peppers dish. I made a massaged kale salad and a healthy fudge recipe a friend posted on Facebook. All turned out great. I’ll try to post ingredients/recipes later.


Before I forget… the fudge recipe. Make coconut butter from 3 cups of unsweetened dried coconut in a food processor until its “runny”. Mix with 1/2 cup cocoa powder, 1/3 cup honey, 1/4 cup peanut butter, 2 tsp vanilla, pinch of sea salt. Put in a small pan lined with parchment. Freeze for 10 minutes. Yum!
