We have a friend visiting who lovesssss Chinese food. So I’m serving this version of orange chicken/ chicken & broccoli/ cashew chicken… without the chicken. Basically, orange cashew tofu and broccoli.
Sautéed ginger and garlic in coconut oil, then poured in some Bragg’s liquid aminos, fish sauce, apple cider vinegar, and OJ. Then, in went the tofu (already browned on all sides) and cashews.
Then threw in the orange chunks and broccoli at the last minute. I wanted to cook them as little as possible to preserve their nutrition.
Served it up on a bed of brown rice.
