Got home late from Sea World and realized I still hadn’t eaten dinner. We’d gotten wet on some of the rides and had gotten rained on while at the park, so I felt a little chilled and was craving something warm. But I was exhausted and didn’t have the energy to put something together from scratch. Sooooo….
I sautéed a few cloves of garlic in coconut oil, then wilted down some beet greens to boost the nutritional value (and flavor) of this canned lentil soup. Just poured the soup in over the garlic and greens. The coconut oil gave it really nice flavor. Exactly what I was craving.
