Sunday’s Dinner

Had a container of frozen kale and lentil soup that I made last month. I ate two HUGE bowls. It was so good. Better than I remember. I think I was pretty sick last time around and maybe couldn’t fully appreciate it. Or maybe it got better after having some time to sit and meld all the flavors together.


I topped it with a spoonful of faux sour cream, which I actually like better than the real stuff now. To be clear, there’s nothing really healthy about it, other than it has no dairy, gluten, or hydrogenated oils. It definitely has to be used in moderation. But it’s better for you than most of the real stuff (unless you get your sour cream unpasteurized from an organic farmer down the street who feeds his cows grass…)
