Prednisone works fast. 🙂 Decided not to take my pain pill this morning. That’s a very good sign. I had an early doctor appointment, so ate a few grapes to take my meds and ran out the door. Got back to the house around noon, and decided to try something I’d heard about from a new friend. Honestly, I didn’t think it would work. Here’s the ingredients.
That’s it. One banana. One egg. Oh- and I added the usual pumpkin pie spices. I put ’em in everything.
Yep- we’re makin’ pancakes people.
Moment of truth: time to flip.
So we lost one to the fate of so many other pancakes: the too early flip. Timing is key here. But at this point, I am thoroughly amazed. They’re gorgeous! Time for the taste test.
Oh. Wow. So. Good. No need for syrup. Crispy on the outside. The texture is not quite that of a pancake, so don’t be expecting that. But this will definitely fill a craving. Absolutely delicious. Wish I could somehow credit my new friend for her suggestion. You know who you are.
We have a new regular breakfast recipe in the rotation now. Awesome! 🙂
